Rules and Regulations:

  1. Registration for participation in the competition is done electronically by sending a recipe.
  2. Recipes must be filled in using the form available for download from the BBA website http://www.bab.bg and sent to the e-mail address: president@bab.bg
  3. Recipes must be submitted no later than 25.04.2026 to the specified e-mail address, and the recipe must be described according to the requirements listed below.

Candidates:

  1. Candidates must be members of B.B.A. who have paid their membership fee for 2026 or have paid the participation fee for the competition.
  2. Participants must register for the event and submit their recipes according to the conditions set by the organizer.
  3. On the day of the competition, candidates must use the same recipe with which they registered. Otherwise, they may be disqualified from the competition.

Competition Format:

  1. The order of participation will be determined by drawing lots.
  2. A specified number of competitors will perform simultaneously at the bar.
  3. Each competitor has a seven (6) minute limit for five (4) cocktails. (Flair – 5 minute limit for (3) cocktails).
  4. All decisions of the Jury are final and cannot be changed.

Evaluation:

  1. Taste evaluation.
  2. Drink presentation:
  • visual presentation of the drinks ;
  • accessories ;
  • consistency of the drinks ;
  • creativity and presentation style ;
  1. Competitor presentation:
  • cocktail presentation ;
  • organization of the working area ;
  • announcement of the recipe in English ;
  1. Competition area:
  • the area will be evaluated for cleanliness at the beginning and end of the presentation /competition time/ by the two technical judges.
  1. Technical skills:
  • the competitor’s technical knowledge and skills;
  1. The Jury will determine the winners based on the total number of points collected from the three competitions.
  2. The evaluation sheets of the Technical and Tasting Jury can be downloaded and reviewed from the BBA website.

Awards:

  1. The winners in both styles will officially represent Bulgaria at the World Championship in MACAO (14–19 October).
  2. Medals and certificates for demonstrated professional skills.

1. THEME
“TEA SIGNATURE COCKTAIL”
The competitor must present an original cocktail in which:

  • Tea is the main and recognizable flavor component
  • Tea must be integrated into the structure of the drink, not only as an aromatic accent
  • All types of tea are allowed (Camellia sinensis and herbal infusions)

2. RECIP

  • 4 identical cocktails must be presented
  • Maximum 6 ingredients (including homemade products)
  • Minimum alcohol quantity: 30 ml
  • Maximum quantity: 70 ml
  • Total drink volume: 70–150 ml
  • The garnish must be edible and functional

⚠ All homemade products must be described in detail in the recipe.
⚠ The use of a pre-batched cocktail is not allowed.
3. TIME AND PROCEDURE
Mise en place – 15 minutes
Competition time – 7 minutes

  • After the 7th minute penalty points are applied
  • After the 8th minute the competitor is disqualified

4. WORKING STANDARDS
The competitor must demonstrate:

  • Proper bar technique
  • Cleanliness and organization
  • Professional behavior
  • Waste control
  • Work without unnecessary movements

It is prohibited:

  • Assistance from third parties
  • Pre-decorated glasses
  • Flammable or dangerous effects without permission

5. PRESENTATION

  • Maximum 1 minute verbal presentation
  • Presentation of the concept
  • Connection between tea, alcohol and idea
  • Professional language and behavior

6. JUDGES
A) TECHNICAL JUDGES (1-2)
Evaluate:

  • Organization
  • Hygiene
  • Technique
  • Ice handling
  • Precision

B) TASTING JUDGES (3)
Evaluate:

  • Aroma
  • Balance
  • Taste
  • Aftertaste
  • Tea–alcohol harmony
  • Creativity

7. SCORING SYSTEM (100 POINTS)
Technical score – 30 points

  • Mise en place – 5
  • Working technique – 10
  • Hygiene – 5
  • Organization – 5
  • Professionalism – 5

Tasting score – 70 points

  • Aroma – 10
  • Balance – 20
  • Taste – 20
  • Aftertaste – 10
  • Creativity – 10

8. DRESS CODE

  • Professional bartender attire
  • Closed shoes
  • No sports T-shirts
  • No logos of unofficial sponsors

9. FINAL ROUND
The top 3 participants will prepare their cocktail again in a new starting order.
10. DISQUALIFICATION

  • Exceeding the time limit
  • Violation of the rules
  • Unprofessional behavior
  • Substitution of ingredients

11. RIGHTS

  • The organizer has the right to publish recipes and photos
  • The decisions of the jury are final
